MICHELLE ROTHWELL		Want to warm up on cold winter days? This recipe is a winner: Coconut Milk Soup 1 ½ qts. Chicken stock 1 Tbsp grated fresh ginger 1 ½ cups coconut milk 8 oz whipping cream 1 lb chicken cut into small cubes 2 – 4 Tbsp fresh lime juice 3 jalapeno chilies, diced Chopped cilantro for garnish (keep seeds HOT, no seeds MILD) Simmer all ingredients until meat is cooked through. Garnish with cilantro. Serves 6 – 8.
